What problems plagued the economy of the south during the Civil War and Reconstruction? Why did Southern planters would focus on cotton production? What problems did this create specialization?

Without reserve of food for animals, the population does not have a high protein diet. Cattle in human food is a sign of wealth of society. Chicago became home to slaughterhouses because of access to different yards. Their yards connected to the East Cost along the supply lines which proved very beneficial during the Civil War. These sites extended to the West (Kansas City) by providing a market for cattle raised in the Midwest to feed the immigrants in New York City. The South had only Atlanta and New Orleans as shopping malls. It was simply easier to escape poverty by living outside the cotton fields of Southern. I am tempted enter into a diatribe on the quality of black soil in the North and the clay soil in the South ... but I will not. Just note that the good black soil is best for cultivation than clay red. Another problem was the lack of a school system. The north was settled by religious groups who wanted to literacy. Reading the Good Book was important during their Sunday services. Private schools have been established in almost every small town in the North. The South had a more evangelical religious base that did not need to read the book, simply need a charismatic leader who has heard the message in their heart. Almost all schools in the South was created by Northerners on a mission. Many Southerners did not like the northerner make fantasy books and "fun" ways of speaking in their communities. The man most responsible for the educational institution primary in Memphis TN, is Southern General Nathan Bedford Forrest. He urged the government to provide education for the 3rd year every child in the South. Today, the majority of southern blacks hate General Forrest. Although they hate him for other reasons. (His statues were removed in the South, both for was the overall loser in war.) If you investigate the famous colleges in the South, you will find many have been based by religious missionaries from the North. None of the northern colleges were founded by Southerners. This was also true before the Civil War and after. On another note: George Washington Carver developed many products for peanuts. He attended college in Iowa. (There were some colleges for him to attend in the South.)
